‘Knock Your Socks Off’ Tailgate Burgers

Rich, Creamy Mushroom Sauce. Pepper Jack Cheese. Juicy Hamburger. Soft, Fresh Pretzel Bun.

Are you drooling yet? It’s ok, your secret’s safe with me. These burgers, with their amazing mushroom awesome-sauce deserve nothing less. It’s the highest compliment this recipe could hope to achieve. That and plates licked clean. Just one bite, and you’ll see. And trust me, these will definitely ‘knock your socks off!’

Seriously, what more could you want in a burger? This is totally indulgent and just screams ‘GAME DAY’ or ‘dude’ food. Just be careful not to indulge in them too often, or they might just ruin a burger for you if it’s served up any other way.

‘Knock Your Socks Off’ Tailgate Burgers

 Pepper Jack Pretzel Bun Burgers with Mushroom Cream Sauce

1 lb ground beef
6 full-size of 12 mini pretzel rolls
6 slices pepper jack cheese, cut in half to make 12 pieces if using slider-sized buns
mayonnaise to spread over the inside of the rolls

Mushroom sauce
8 oz thinly sliced mushrooms
3 tbsp butter
2 tbsp minced garlic or 4 garlic cloves minced
1/2 cup diced white onion
1 tbsp Worcestershire sauce
1/2 cup heavy cream, or half and half
1/2 cup beef broth
1/2 tsp salt
1/2 tsp pepper
1 tbsp cornstarch + 2 tbsp cold water, mixed together

Topping
1/2 cup butter
2 tsp poppy seeds
2 tsp Worcestershire sauce

Directions

  1. Divide the ground beef into 6 patties, or 12 small patties if using rolls instead of buns. In a large skillet or dutch oven, cook the patties until browned on both sides and cooked completely through. After they’re cooked, set them aside, and discard excess grease.
    2. In the same skillet, melt 3 tablespoons of butter. Add in the mushrooms and garlic, and sauté until the mushrooms are tender. Add in the Worcestershire sauce, cream, broth, salt, and pepper. Bring the sauce to a boil, stirring constantly, and then stir in the cornstarch mixture. Once the sauce has thickened, remove it from the heat and set it aside.
    3. Slice open the pretzel buns and spread some mayo over the top and bottoms of each bun. Place the cooked patties on the bottom of bun and add the pepper jack cheese on top. Spoon a generous amount of the mushroom sauce over the top of each patty and replace the top of the bun. Put the assembled burger in a greased 9 x 13 baking dish. Melt the 1/2 cup of butter for the topping and stir in the poppy seeds and Worcestershire sauce. Spoon the melted butter over the top of the sliders. Cover the dish tightly with foil and bake at 375 degrees for about 15 minutes. Serve hot.

Greek Chicken Burger Sliders with pickled onions & Greek yogurt sauce

Greek is one of our (the hubs and I’s) favorite kinds of food. The sons are a bit more leery of the foreign flavors. On those rare evenings he and I are able to get out alone, we’ve been known to hunt down new Greek places to try. Our favorites are usually the little hole in the wall joints, that are almost always the most authentic. I especially love coming home and trying to replicate the flavors and dishes we’ve found.

A lot of the ingredients in these sliders we often find in many of the Greek wraps we’ve tried, along with either grilled chicken, grilled gyro meat, or Kafta (spiced lamb). It may not be a silver platter, but I love the way these flavors are bundled together and served on a slider bun. For these, the buns ARE the silver platter.

Another thing to love (especially with 4 hungry, hungry hippos boys to feed)? These dense burgers are protein packed, making every bite count, and exploding with flavor from healthy condiments and ingredients.

Healthy! With mint, parsley, feta, bell peppers, they’re then topped with pickled red onions and a tangy Greek yogurt sauce. Holy yum!

Don’t be overwhelmed when you glance at the recipe or ingredients list. Yes, it does look like a lot. Yes, it is a lot. BUT, moving in the steps as we’ve broken them down keeps it from being overwhelming. And then end result is so worth it. And, it can even be made ahead of time if your dinner hour is usually the dinner rush.

These are totally unique little burgers, that deliver an awesome flavor combo. It will be an instant hit with whoever eats it, whether it’s for a regular dinner, a pretty party app that’s packing a flavor punch, or something you plan to debut at your first summer BBQ.

Greek Chicken Burger Sliders

For the quick pickled red onion:
1/4 cup apple cider vinegar
2 tsp brown sugar
3/4 tsp kosher salt
1/2 cup water
1/2 thinly sliced large red onion

For the Greek yogurt sauce:
1 (6 oz) plain Greek yogurt
1 tbsp lemon juice
2 garlic cloves, minced
1 tbsp finely minced parsley
1 tbsp finely minced mint
1/2 tsp kosher salt

For the chicken burgers:
1 lb ground chicken
1/4 cup crumbled feta cheese
1 tbsp finely minced mint
1 tbsp finely minced parsley
1/4 cup finely diced red bell pepper
1/4 tsp salt
1/4 tsp ground black pepper
baby spinach, optional
6-8 slider buns

Directions

For pickled red onion:
1. In a small bowl whisk together vinegar, brown sugar, salt and water. When the sugar & salt are totally dissolved in the mixture, add the onion and let it sit on the counter for at least an hour.

2. Store leftovers in the fridge with a little bit of the pickling juice.

For Greek yogurt sauce:

1. In a small bowl add everything and mix together. Keep in the fridge until ready to use.

(Keep in mind the burgers contain feta cheese which will add a bit of salt to the finished sandwich)

For chicken burgers:
1. In a large bowl add ground chicken, cheese, mint, parsley, red bell pepper, salt and pepper.

2. Using your hands, mix everything together until thoroughly combined. Divide meat mixture into 6 – 8 slider sized burgers.

3. Over medium heat, cook on the grill until the inside of the burger is no longer pink. {If you do not have a grill you can pan fry the burgers in one tablespoon of olive oil.}

4. To assemble the burgers add Greek yogurt sauce to the top and bottom of the bun, add burger, baby spinach (if using) and a few pickled red onions.

Hot Ham & Cheese Sliders

These sliders. If you’ve seen them floating around the web, but haven’t given them a try yet, now’s the time to get to it. They really are that good. After my first bite, I could’ve kicked my own self for dragging my feet for so long.

Ooey, gooey finger-lickin’ good. Yes, that’s exactly what these sandwiches are. Prepare for the deliciousness. I think we can all agree that when cheese is involved with any meat, it’s pretty much a wonderful thing. Ham and cheese may be a beloved classic, and most definitely a wonderful thing, but add in the poppy seed mustard butter onion sauce thing and it’s umm, wow! The sauce is what really knocks this one out of the park.

So they’re yummy, and super simple to assemble, two things that don’t always go hand-in-hand in the kitchen. Doesn’t that just make them perfect for even your busiest days or nights?

The sons’ and the hubs drool over these things now, even the leftovers (if there are any the next day, which is rare). Are you thinking it sounds great, but bummed because you don’t have tiny any pretty petite buns on hand? If you’ve got some kind of larger bun, you’re in luck. I’ve made these on kaiser rolls, dinner rolls, and once even on hamburger buns with the same drool-worthy results.

Game day, brunch, a regular party, dinner, even a hot lunch. Whatever the occasion these bad boys will be the stars of the show.

Don’t want any pressure? Great. The sandwiches can be made up to a day in advance. Just don’t fix and sauce ’em until you’re ready to heat and serve. Otherwise, you’re going to end up with mush. And I haven’t met a ‘mush’ yet that I actually liked.

Hot Ham & Cheese Sliders

Hot Ham & Swiss Cheese Sliders

24 Hawaiian rolls or slider buns
24 pieces of ham, regular or honey flavored
24 slices of Swiss cheese
2/3 cup mayonnaise

Poppy Seed Mustard Sauce:
1 tbsp poppy seeds
1½ tbsp yellow mustard
½ cup butter, melted
1 tbsp minced onion
½ tsp Worcestershire sauce

Directions 

1. Spread the mayo onto both sides of the center of each roll. Place a slice of ham and a slice of cheese inside of each roll. Close the rolls and place them close together into a large baking dish, or onto a heavy cookie sheet.
2. In a medium bowl, whisk together all of the sauce ingredients until evenly combined. Pour the sauce as evenly as possible overtop all of the sandwiches. If you don’t want to use all of the sauce that’s ok. Just make sure to use enough to cover the tops of the rolls. Let sit 10 minutes or until butter sets slightly. Cover with foil and bake at 350 degrees for 12-15 minutes or until cheese is nice and melted. Uncover and cook for 2 additional minutes or until tops are slightly browned and crisped. Serve warm.

Fiesta Tuna Salad Sliders

So one day I reeeeeaaaaallllllly wanted Mexican food. Of the oh-so good tasting, but so-oh not good for your waist-line variety. Like an endless basket of tortilla chips with some of that authentic creamy, white queso for dipping, and maybe even some sour cream and quac on the side. (We want guac. We want guac. Thank you, Elmo for that little ditty that’s now stuck in my head) But that wasn’t on the menu. Going out to eat wasn’t in the cards, and clearly my pantry and fridge were letting me down. (Again, I griped about having no known Mexican restaurants that deliver in my vicinity. Because, well because… how is this not a thing already?!)

Then I remembered this fancy, schmancy recipe (except it’s totally not, but if tasty-ness was currency, it’d be golden). Fiesta tuna salad sandwiches may not have been sinfully delicious chips dipped in warm, gooey queso, but as my Mama always said, “Beggars can’t be choosers.” And it was Mexican food. Good Mexican-style food. Good for you too, to top it all off. My how my day had changed. While I got down to chopping the veggies I’d need, my mood gradually changed from “deprived of tortilla chips” and being lulled to “problem craving coming to it’s conclusion”. Mean Mami Mexican food crisis averted. At least for today. Seriously, you don’t want to get in my way when I’m craving Mexican food. It could escalate quickly and then we’d be in a full-on nuclear melt-down and that just isn’t gonna work for me. Now that I had a new idea, and some direction to go in other than to Old El Paso, I snagged some supporting ingredients from the pantry and salsa-ed my way through the rest of the recipe.  Olé!

Now I’m going to enjoy another delicious sandwich with this spread for lunch tomorrow too, but this time as a tuna melt! Gotta keep those taste buds on their toes. Trying to go light? This makes a great dip with either tortilla chips or crackers. (Hello, my next tailgating party!)

Fiesta Tuna Salad Sliders

 Fiesta Tuna Salad Sliders

recipe adapted from Taste of Home

6 cans, 5 oz each, water-packed white tuna or albacore, drained and flaked
1 large red onion, chopped
2 medium tomatoes, chopped
2/3 cup reduced fat mayo
2 jalapeno peppers, seeded and finely diced (optional)
1/4 cup lemon juice
2 garlic cloves, minced
1 tsp Old Bay seasoning
1 tsp black pepper
12 ciabatta sized slider buns, or more depending on how ‘stuffed’ your buns are
12 slices of pepper jack cheese
lettuce leaves

Directions

1. In a large bowl, combine the first nine ingredients. Set the tuna salad in the refrigerator to ‘chill’.

2. Once the tuna salad is cold, spread it over the bun bottoms. Top each with a slice of cheese and some lettuce.

3. Put the tops back on, and serve!

Balsamic Vinegar & Honey Pulled Pork Sliders

Pork that’s slowly roasted in the crock pot until it’s so tender it falls apart, and is then mixed with a sweet and tangy balsamic vinegar & honey barbecue sauce, makes for a crowd-pleasing platter of pulled pork sliders. Not only are they great party appetizers, but the sons tear them up when we have them for either lunch or dinner, and the left overs are just as yummy. I know, I know, the name makes them sound pretty fancy, but they couldn’t be any easier. Let the pork cook during the day and when it’s done it’s a snap to mix in the homemade sauce, making them a perfect option for any day, including those busy weekday meals. Got leftovers? This freezes beautifully to save for a later meal. Or you could always make up an entire batch and freeze that if you’re looking to have meals stocked on stand-by.

Balsamic Vinegar & Honey Pulled Pork Sliders

Balsamic Vinegar & Honey Pulled Pork Sliders

recipe adapted from Better Homes and Gardens

2 1/2 pound boneless pork shoulder roast
1 cup chopped onion (1 large)
3/4 cup chopped green sweet pepper (1 medium)
1 tsp crushed dried thyme
1/2 tsp crushed dried rosemary
1/2 cup chicken broth
1 cup balsamic vinegar
3/4 cup ketchup
1/3 cup packed brown sugar
1/4 cup honey
1 tbsp Worcestershire
1 tbsp Dijon mustard
2 tsp minced garlic
1/2 tsp pepper
1/4 tsp salt
20 slider buns
coleslaw, optional
sliced sweet or dill pickles, optional

Directions

1. First remove any excess fat from the meat. Place the trimmed meat in the crock pot, cutting to fit if necessary. Add in the onion and pepper, and sprinkle the vegetables and meat with the thyme and rosemary. Pour broth over the meat.
2. Cover and cook on low for 9 to 10 hours or on high for 4 1/2 to 5 hours.
3. Meanwhile, we’ll be making the bbq sauce. Combine vinegar, ketchup, brown sugar, honey, Worcestershire sauce, mustard, garlic, black pepper, and salt in a medium sauce pan. Bring to a boil, then reduce heat to a simmer. Let the sauce simmer, uncovered, for 20 to 25 minutes, or until slightly thickened, while stirring occasionally.
4. Transfer meat to a cutting board. Use two forks to pull meat apart into shreds, discarding any fat, or use a stand mixer to do the job for you. Strain the peppers and onions and discard the liquid. Return shredded meat and vegetables to the crock pot. Stir in barbecue sauce until fully incorporated. Cover and cook for 1 more hour on low.
5. To serve, spoon the bbq onto the slider bun bottoms. Top with coleslaw and pickles, if desired. Cover with bun tops. Eat & enjoy!

Crockpot Chicken Parmesan Sliders

I can’t stop. I won’t stop. No, I’m not trying to be Miley. I don’t want to get anywhere near Robin Thicke. I would much rather make a yummy slider sandwich than twerk. Seriously, though. I can’t seem to get enough of sliders recently. I don’t know if it’s the whole ‘mini’ thing that’s got me hooked, or just a refreshing change.  I’m guessing a bit of both. In either case, I’ve pinned every new slider recipe I have found, and am on a mission to try them all. One recipe at a time of course, like the easiest cheeseburger sliders ever and our chicken and waffle sliders. This is the latest, and it lived up to it’s name. These petite, slightly varied versions, have all the tried and true flavors of Chicken Parmesan, but without all the work. These healthy sandwiches are perfect for a party, a dinner, or even for a lazy weekend lunch. They are sure to score a spot on your list of family favorite recipes.

Crockpot Chicken Parmesan Sliders

4 Sons 'R' Us: Crockpot Chicken Parmesan Sliders

recipe adapted from Plain Chicken

3 large boneless, skinless chicken breasts (can use frozen)
1 jar(28oz) spaghetti sauce
1 tbsp minced garlic
1/4 tsp onion powder
salt & pepper, to taste
1 cup shredded mozzarella cheese
slider buns

Directions

1. Place chicken breast in the bottom of a crock pot. Top with spaghetti sauce, minced garlic, and onion powder. Cook on LOW for 6-8 hours, or HIGH for 4. Shred chicken and stir until evenly combined with the sauce. 2. Preheat broiler. Toast buns. Top toasted buns with chicken and a sprinkle of shredded mozzarella cheese. Place chicken sandwiches under broiler to melt cheese.

Sous Chef Sunday: Chicken & Waffle Sliders

Mmm. Chicken, and waffles. Two seemingly unrelated things, but when put together make a food-gasmic combination. The sons, yet again, were skeptical. Four identical sets of little arched eye-brows as I got out just 3 ingredients. When, oh when, will they learn to trust me in the kitchen?! The sons followed the super simple recipe all by themselves, although with supervision since they were using the oven. The older sons can handle it, but Son # 4 gets so excited to be involved in the process, I worry he might forget hot things lead to burned fingers. Each son, in turn, took one tentative bite, and then proceeded to scarf them down. They looked like squirrels packing away food for winter. There was even a brief skirmish over the last two and who deserved them MOST. A chicken and waffle combo may have sounded weird to the more traditional tastes of the Sons, but they all agreed UNANIMOUSLY (might I point out this almost never happens!), that these little suckers are finger-lickin’ good.

Chicken & Waffle Sliders

4 Sons 'R' Us: Chicken & Waffle Sliders

frozen mini waffles, fully toasted
chicken tenders, cooked
{real} maple syrup
toothpicks

Directions

1. Slice your cooked chicken tenders in half. Break your toasted waffles apart.
2. Sandwich one piece of chicken between two cooked waffles. Secure with a toothpick.
3. When all the tenders have been ‘sandwiched’, drizzle them with maple syrup and serve warm.

The World’s Easiest Cheeseburger Sliders

I’m definitely a foodie at heart. I come from a long ling of women who love good food, and I’m pretty sure I’ve done my job of instilling that same feeling in my boys. While normal sized food is always great, there’s just something about food in miniature that I just can’t help but adore. It’s just so cute and fun. Not to mention, with four growing boy, two growing teenage boys who inhale food like vacuums, it’s often a whole lot less messy. With those things combined, sliders are a huge hit with this mom. Still, it was a wee bit time consuming to have to shape each petite patty by hand. Then I stumbled on this genius kitchen life-hack, and BAM! Mind.Blown. This recipe, literally, is for making the easiest sliders ever. Ever.

Easy Cheeseburger Sliders

4 Sons 'R' Us: The World's Easiest Cheeseburger Sliders

1 1/2 pounds, 93% lean ground sirloin
1/4 cup seasoned bread crumbs
3/4 cup chopped onions
1/2 teaspoon salt
1 package (12-count) Kings Hawaiian sweet dinner rolls (or slider buns)
6 slices cheddar or American cheese

Directions

1. Heat oven to 400 degrees.   In a bowl, combine beef, bread crumbs, onion, and salt.  Gently press mixture into a 9-by-13-inch pan so that it makes one large patty of even thickness.  Use the tines of a fork to poke holes throughout the meat.  Bake for 30 minutes.  As it bakes, the meat will shrink away from the sides and liquid will accumulate around the edges of pan.  2. When fully cooked, remove the pan from oven (keep oven turned on) and carefully drain off the liquid.
3. Top the meat with an even layer of sliced cheese; return pan to oven for about 2 minutes or until the cheese melts.  Remove from the oven and allow to rest for a few minutes.
4. Cut into 2-inch squares (or the size of the buns used), making 12 mini- hamburgers.  Serve with dill pickle slices and ketchup.  Serves 6 at 2 sliders each.
